You are not correct in the statement that Costco "only tenderized steaks". They definitely tenderized roasts as well. Regardless of grade. Check again next time you are there. Or do a quick search online, you'll find more than one or two pictures of cut roasts that are blade tenderized from Costco.Costco only tenderizes steaks (even Prime . Although I don't purchase my steaks from Costco as I do not need that many, I would not have a concern about the safety of the teenderized steaks. The FDA as a standard for cleaning the tenderizing machines and Costco has committed to cleaning more frequently than that standard. They certainly do not want their member to be subjected to food poisoning; that would not be good for business.
The warning on the package is on there out of a requirement from the FDA. With that said, these are recommendations from them to ensure food safety. It's always up to the individual purchasing and cooking the meat to do what they want with it. The bacteria isn't usually from the machine doing the tenderizing. It is present on the surface of a lot of the meat we purchase and there from the slaughtering process. It is normally killed through the cooking of the meat because it's on the outside and subject to direct higher heat for a longer period enough to kill any harmful bacteria. With blade or mechanically tenderized meat, that bacteria can be pushed into the center of the meat when the blades are pushed in through the process of tenderizing.
A lot of the listeria we are seeing now is from unsanitary processing equipment.
We can pasturize meats by holding at a x temperature for x amount of time. It doesn't always have to be a high heat. It is all about food safety, we all do what we feel safe doing. But to believe Costco only tenderized steaks is wrong.
