Pork Costco Brat's (bratwurst)

Bumped into a total stranger at the brat display at Costco and he said they won't disappoint, so I picked up a pack.

Anyone tried them? Do you cold smoke them or smoke them at a high temp or simply put them on your gasser/charcoal grill?

I normally do my Italian Sweet sausages on the gas grill while the peppers & onions are heating in a pan (with olive oil and garlic). Once the sausages are done, I drop them in the same pan and bring the who thing to the table. Great eats and easy clean up.

Suggestions Welcome.

I’ve got both Sam’s and Costco. I like them both for different reasons. I don’t go on the weekends and I usually go on Monday mornings. Sam’s opens a couple hours earlier than Costco so it makes it easier to hit both early and done.
I have both too. I just got a little disgusted with Costco because of the number of people at check out. Sam’s has online payment in store, which I like. But I do like certain things from both stores. I may try Costco weekdays at opening. Thanks for the tip.
 
I completely agree, I wish Costco would switch to that too. At least Costco has the self checkout section now. They are behind the times for sure.

Yes, I have went to the self check out at Costco and that helps some. I’m just going to start going there opening weekdays taking your suggestion. Hopefully I’ll have a better attitude about Costco lol.
 
You guys are spoiled rotten! I buy all my meats from Costco as they have the best quality ones, not just for BBQ but also seafood. I generally go there only about once a month to stock up and don't mind the lines at checkout. I remember the time before Costco came to town when getting high quality meats was far more challenging.

Not spoiled but always short on time and shorter temperament. Lol. I get most of my meats from a local butcher of local farm raised meat. I do get some from Costco but I also think Sam’s has quality meat too. Then we have a US Foods/Chefs Store that has great bulk meat prices and also the local grocery stores weekly sales. So I shop for deals when I get a chance.

I promise you the best way is to smoke them at 180F (super-smoke if you are using a Traeger) for 1 hour then at 225F until the internal temperature reaches 160F. Turn them every 30 mins throughout to make sure they get evenly colored. Total cooking time approx 1hr 45 - 2hrs.

The result is a perfectly cooked Brats with a great snap and mild Smokey flavour.
 
I use a place called Shamrock Food Service Supply, They supply to restaurants but have a retail outlet. They have a cold room you walk in to that displays all their meats. Their ground beef comes in 6 pound sleeves and is available from 70/30 to 83/17. They don't butcher meat, it is vacuum packaged so if you want a Prime rib you get a large one. I can cut it down to size frozen and stash it in the freezer or smoke it whole and cut it down to the size I need and vac pack and freeze the rest. Their ribs are packaged in two slabs so thats good for me. I have one of their cards and get a small discount on what ever I buy. They also have a big selection of hams. The Costco is a long drive from where I live and last time I was there it seams to always to be very crowded.
