I always cook my potatoes on the grates, unwrapped. When it’s time to pull the meat, I just crank the heat to 350, and the potatoes will finish, while the meat rests. After cooking for 2 or 3 hours at 225, it only takes a few minutes at 350 to finish, and a few minutes at that temp will also harden up the skin a bit.
