Help! Christmas Brisket

Of course! And I should have stated that. I use my Fireboard religiously. I have never trusted the Traeger temperatures - probably because I found this forum before I received my grill. lol
The cool thing about the FireBoard and over night cooks is, you can set a high and low alarm for the pit temp AND a high and low alarm on your protein. This is how I sleep well at night and not worry about what the grill or protein temps are doing.

I can set a high alarm on my InkBird but I’m not certain about low. Hopefully I can. I’m a bit more worried about that for overnight brisket than I am high.
