When resting your brisket, does anyone use the "Keep Warm" setting on their Traeger vs resting in a cooler?

Just keep in mind that resting and holding are two different objectives. Resting is the process of removing your meat from heat for a relatively short span of time, such as to a kitchen countertop, to end the cooking process and possibly redistribute juices. After the rest is the holding process where you store it while maintaining a safe temperature--such as in a cooler--until you want to serve it.
