Here is a great brine for pork
- Quart of water
- 1 cup salt
- 1/2 cup of brown sugar
- Add Rosemary, peppercorns, fennel seed, mustard seed, and garlic for aromatics
- Bring to a boil
- Add some ice, and let cool
- Add pork and let stand for 4-6 hours, If chops are thicker, let stand for 6-12 hours
