Here is a great brine for pork
  1. Quart of water
  2. 1 cup salt
  3. 1/2 cup of brown sugar
  4. Add Rosemary, peppercorns, fennel seed, mustard seed, and garlic for aromatics
  5. Bring to a boil
  6. Add some ice, and let cool
  7. Add pork and let stand for 4-6 hours, If chops are thicker, let stand for 6-12 hours
