While I love my Traeger Ironwood 885, I do not think it get quite hot enough to properly sear steaks. Last year I purchased a four-burner CharGriller Flat Iron gas griddle and love it. You can either smoke the meat first and then sear it afterward (reverse sear) or sear it first and then smoke it to final temp. However, I realize that many do not have the space on their deck or patio for both a Traeger grill and a full size griddle. Some might not want to spend several hundred dollars to get a large free-standing griddle. If either of those conditions applies, you might want to consider the Blackstone 17" Tabletop Griddle that I saw at Walmart for only $117.
