That works, Thanks!If I was gonna cook em on the Traeger, I would cook them overnight in a slow cooker (on low) first. Don’t season them until they are tender, if you do, it will make them tough.. Once they are tender, season them, and then finish them off on the Traeger. Once tender, you really can’t overcook them...
Yes, definitely. I was gonna do cornbread last weekend on the T, and forgot all about it!Yes, you can cook them faster by boiling them, but I think they are much better if cooked for a long time at a simmer.
Don’t forget the cornbread.... can’t have pinto beans without it...
WICKED BAKED BEANS
(Beans that will even make Chili Heads happy)
12-16 strips of bacon cut into 1/2 inch squares
1 Medium onion, diced
1 Bell pepper, diced
2 - 4 Jalapeno Peppers, diced (seeding is optional)
2 - 55 ounce cans Bushs Baked Beans, drained
2-8 ounce can of pineapple crushed, drained
2 Cup Brown Sugar, packed
2 Cup ketchup
1 to 2 Tbs. dry (ground) mustard (1 for lightweights, 2 for those that like a stronger kick)
Saute bacon pieces in fry pan until crispy and remove from pan with a slotted spoon. Saute onion, bell pepper and jalapeno pepper until tender.
In a large mixing bowl combine beans, pineapple, brown sugar, ketchup and dry mustard. Stir in bacon pieces and vegetables. Pour into a 12X9 or a deep 9X9 aluminum baking pan. (While mixing if things look dry, add additional ketchup 1/4 -1/2 cup at a time)
I cook at 225 for 1 1/2 hrs.
I will have to try some of those variations, though I don't do Pork Steaks. I cook them most of the time with ribs. And chop the skirt meat into the beans. I have enjoyed this recipe for many years.Better known as: Dutch’s wicked baked beans from Smoked-meat forums
When I do beans with Pork Steaks, it's a chopped Pork Steak that goes in my beans instead of bacon... I use Lemon Juice instead of pineapple, No jalapenos, apple cider vinegar, pepper, granulated garlic, and some pork rub

1 Bell pepper, diced Optional

Equal amounts of Brown Sugar and ketchup
(ground) mustard

I was going to try this with some pork belly. I have 3/4 of a pack of pork belly left over in the freezer from a Burnt Ends experiment. I think there are 4 of them about an inch thick and maybe 3.5" long. My thought was to thaw them and maybe cube them into smaller bites and then pan fry them as a head start; Then, dump them into the beans.Better known as: Dutch’s wicked baked beans from Smoked-meat forums
