I usually just buy canned beans and smokem for a bit, i wanna change it up to homemade. Im looking for some beans recipies.
 
If I was gonna cook em on the Traeger, I would cook them overnight in a slow cooker (on low) first. Don’t season them until they are tender, if you do, it will make them tough.. Once they are tender, season them, and then finish them off on the Traeger. Once tender, you really can’t overcook them...

Yes, you can cook them faster by boiling them, but I think they are much better if cooked for a long time at a simmer.
Don’t forget the cornbread.... can’t have pinto beans without it...😏

WICKED BAKED BEANS
(Beans that will even make Chili Heads happy)

12-16 strips of bacon cut into 1/2 inch squares
1 Medium onion, diced
1 Bell pepper, diced
2 - 4 Jalapeno Peppers, diced (seeding is optional)
2 - 55 ounce cans Bushs Baked Beans, drained
2-8 ounce can of pineapple crushed, drained
2 Cup Brown Sugar, packed
2 Cup ketchup
1 to 2 Tbs. dry (ground) mustard (1 for lightweights, 2 for those that like a stronger kick)

Saute bacon pieces in fry pan until crispy and remove from pan with a slotted spoon. Saute onion, bell pepper and jalapeno pepper until tender.

In a large mixing bowl combine beans, pineapple, brown sugar, ketchup and dry mustard. Stir in bacon pieces and vegetables. Pour into a 12X9 or a deep 9X9 aluminum baking pan. (While mixing if things look dry, add additional ketchup 1/4 -1/2 cup at a time)

I cook at 225 for 1 1/2 hrs.

When I do beans with Pork Steaks, it's a chopped Pork Steak that goes in my beans instead of bacon... I use Lemon Juice instead of pineapple, No jalapenos, apple cider vinegar, pepper, granulated garlic, and some pork rub

When I do beans with Pork Steaks, it's a chopped Pork Steak that goes in my beans instead of bacon... I use Lemon Juice instead of pineapple, No jalapenos, apple cider vinegar, pepper, granulated garlic, and some pork rub

I will have to try some of those variations, though I don't do Pork Steaks. I cook them most of the time with ribs. And chop the skirt meat into the beans. I have enjoyed this recipe for many years.

Beans #2
2x Bushes Burbon beans
1/4c maple syrup
1/4c apple cider vinegar
1c Brown sugar
2 TBSP chili powder
1 red onion , minced
1 1/2c BBQ sauce (Treager Que)
dash liquid smoke
1/3 lb thick cut bacon (. Or some left over ribs)
1/2 green bell pepper , minced
1/2 red bell pepper , minced
1/3 c Burbon ( I use gentleman jack)

strain liquid from beans
cook bacon 1/2 way, cut up bacon
Cook onions and peppers in bacon fat

add chili powder, liquid smoke & BBQ sauce to bacon and beans
cook low and slow...
in a separate pan soak maple syrup, apple cider vinegar, Burbon and brown sugar until it coats the back of a spoon then add to bean mix
cook low and slow... cast iron pot on the Treager 225 SS stir for 1-2 hrs, add water as required...

Equipment needed:
  • Large, deep skillet
  • Hefty EZ Foil Roaster Pan 11 ¾” x 9 ¼” x 2 ½”
  • Colander
  • Measuring cups and spoons, chef’s knife, spatulas, etc.
Ingredients:
  • One package Oscar Mayer Fully Cooked Bacon. If use of regular bacon is necessary, cook and drain about 10-12 slices of bacon. Cut bacon into small pieces.
  • Two 28 oz cans of Bush’s Original Baked Beans
  • Three to four medium onions yielding approximately 2 cups chopped
  • Two bell peppers chopped (Although green peppers can be used, for best color and flavor use ½ green, ½ red, ½ orange, ½ yellow)
  • Ketchup - 1 ½ cups
  • Dark Brown sugar - ½ cup packed
  • Cane or sorghum syrup - ½ cup. If necessary, dark corn syrup or unsulfured molasses may be substituted.
  • Spicy Brown Mustard, preferably with horseradish - 1 TBSP
  • Worchester Sauce - 1 TBSP

  • Preparation

  • Chop 3-4 medium onions to yield approximately 2 cups.
  • Chop two bell peppers. Although two green peppers can be used, the best color and flavor is obtained through the use of ½ green, ½ red, ½ orange, ½ yellow.
  • In a large, deep skillet, sauté 1 package of Oscar Mayer fully-cooked bacon cut into small pieces along with chopped onions until onions are caramelized. If uncooked bacon is used, cook and drain 10-12 slices prior to adding onions.
  • As soon as onions are clear, add chopped peppers. Cook over high heat until peppers are softened (about 5 minutes on high heat).
  • Drain two 28 ounce cans of Bush Original baked beans and add to the skillet and stir.
  • Add 1 ½ cups ketchup.
  • Add ½ cup packed dark brown sugar
  • Add ½ cup cane syrup or sorghum syrup to the bean mixture.
  • Add 1 Tablespoon spicy brown mustard.
  • Add 1 Tablespoon Worchester sauce.
  • Stir the mixture until well blended. If necessary, adjust ketchup, mustard, or sweetener to taste. You can also use your favorite BBQ sauce.
  • Heat beans, stirring occasionally, until the mixture begins to bubble.
  • Transfer mixture to a 11 ¾” x 9 ¼” x 2 ½” EZ Foil Roaster Pan. If desired, cooked bacon strips or crumbles can be added to the top for appearance.
  • Bake uncovered on Traeger for 1 hour at 400F.
  • The recipe will feed 25-30 people. If you do not need this many servings, freeze unused portions in freezer containers or Ziploc freezer bags. This is preferable to cutting the recipe in half due to the time it takes to prepare.

I was going to try this with some pork belly. I have 3/4 of a pack of pork belly left over in the freezer from a Burnt Ends experiment. I think there are 4 of them about an inch thick and maybe 3.5" long. My thought was to thaw them and maybe cube them into smaller bites and then pan fry them as a head start; Then, dump them into the beans.

Thoughts? What could be bad?

1 pound TN Pride sausage (or your ground meat preference)
2 x 28 oz of Bushes original baked beans
1 can peach pie filling somewhat drained
1 diced medium onion
BBQ sauce (optional)

1. Brown meat.
2. About halfway through browning meat add onions.
3. Drain grease and set aside
4. Drain gel from peach filling and chop peaches
5. In mixing bowl mix beans and peaches
6. Then add meat and onions
7. Pour in 9x13 baking dish and bake for 1-1.5 hours at 250 degrees
8. After you take it out you can lightly drizzle with bbq sauce if desired
