I have some relatives in Vancouver. They are not very close so haven't been there in awhile, but now I have a reason to go!

By the way, regarding Vancouver, I cannot think of another major city with such breathtaking natural beauty: major river valleys, beaches, harbors & islands, and views of snow-capped mountains all at once.

It is beautiful. You can get from snow to the beach all in the same day.
I am over on Vancouver Island. Have a look at Victoria if you want to see a pretty city.
For beaches, look at Parksville/Rathtrevor or Tofino if you want beach and surfing. The island is beautiful, I would be hard pressed to leave this island.

Given an opportunity to select a beef belly, I would have tried for leaner pieces.
But this was 100% success. The flavor is great, texture and mouth-feel is different than pork for sure.
