Hey there, just wondering what the consensus is...wrap brisket in butcher paper or foil? Or both, maybe?
 
Wrapping in paper let’s the bark breath so it would be a harder set than with foil, all other things stable.
foil since it doesn’t breath, will get done a bit faster.
‘lots of thought on foil vs paper here on the forum….
FYI…I use paper, watched the Arron Franklin videos…see around 5 min on this linkArron Franklin brisket wrap…

If I wrap at all, it’s paper. IMO foil steams the meat and makes it taste like pot roast..

That's called "pit-master preference" and if you want to know which one is more successful do an internet search what the BBQ masters use..
There really is NO consensus because there is 3 answers and none are wrong, Paper, Foil, or NO WRAP AT ALL.

Don't forget the version where you wrap in paper and place it in a foil boat.
 
Mad Scientist BBQ did a video about this. In the end, the advice he gave was to try all three (unwrapped/paper/foil) and see what you like personally.
