I have a little BBQ055. It's the Basic grill I picked up in 2014. Last year I replaced the controller with an elite digital controller. (I also replaced the drip tray and baffle at the same time.) It's a dial model that goes from smoke to 380 and does not allow you to set the P Setting. (I wish I knew that was an option before I replaced it). I am having trouble using the smoke function. It is getting too hot.
I am trying to find a way to get the smoke box a little cooler so the salmon I am smoking has more time under the smoke.
Any ideas how to get it to smoke a little cooler? It seems like if I vent the lid more, it will just compensate and dump more pellets in. Maybe I could use some foil and duct heat towards the sensor so it thinks it is hotter than it is? I'm open to suggestions.
