What’s a good reheat???

I’m going to my a buddy’s ski house which is two hours away. I told them I would bring dinner. I want to smoke something for a crew of 6 adults and 3 kids. I don’t have the luxury of time the day of, so I can smoke it the day before but any suggestions about what is a good meal I can smoke the day before and reheat? I was thinking about doing pulled pork and then reheat but it can get really dry on the reheat. Ribs are tough. Any suggestions? And ideas for how to reheat??
 
I freeze and reheat regularly without any issues. I use my food saver to vacuum seal my leftovers. I also cook up ribs to freeze and donate for a good cause. After vacuum sealing I freeze them. Either I or others will put them in a pot of boiling water until they are warmed and soft. I do same with pulled pork too. Everyone can’t believe how great they taste. They will taste just like you just pulled from smoker. I do the same with chicken and even burgers. Just remember to heat up whatever you plan to eat because you can’t re freeze it. It doesn’t take but about 20 minutes from ribs and not much longer depending on pulled pork. Vacuum sealer’s are perfect for what you’re looking for. Well worth the money.
 
Not sure what your plans are day of the trip, but if possible I would do a tri tip (favorite around here) and throw it in a cooler before the 2 hour drive. Then once you get there you could sear it. The ones we do only take an hour and a half or so to get to about 125.
 
If you have a vacuum sealer, you can do pulled pork or brisket. Drop the sealed bag in a pot of water. If you have a sous vide device, that's the way to go. But if not, you can still get everything back up to temp. 165 is what you'd be aiming at for a reheat temp on either brisket or pulled pork assuming you've already cooked it to 200-205 ahead of time.
 
Vacuum sealing works extremely well with smoked meats. It works so well that it has become an integral part of my cooking, unless I am having large company over. I like this approach so much I am even considering investing in a chamber vacuum sealer!
