I want to give cold smoking a shot in my Pro 34, but the lowest it can go to on the smoking setting is 160. I watched a YT video where people use pellet smoke tubes. Has anyone tried them? What would the temp inside the smoker get to if you just light a smoke tube only? Thanks.

I have not done it on a Traeger yet. I have done cheese on a "rigged up" Little Chief, with good success. Your highest temp should be at best, ambient outdoor temp and no more than in the mid to low 90's, otherwise the cheese will melt. Once done I wrap each block in parchment paper and refrigerate a few days then vacuum seal and refrigerate for at least 2 weeks to allow the smoke flavor to penetrate, otherwise it has a very acrid flavor. I have ordered a smoke tube and once it arrives and I have some time I will try it on the Traeger and post the results.

I do use a smoke tube in my Pro 34 to add more smoke when cooking, but I've never cold smoked. The tube (12") does put out quite a bit of smoke without adding much heat. I use a combination of pellets and hickory wood chips in the tube and light it with a butane torch. IMHO, I think it would work fine for cold smoking and they're not very expensive.

Never tried cold smoking on anything besides cheese. I wonder how long a piece of meat would take to be "done".

A few hours for sure, but I am going to give Biltong a try, but I want the smoke taste. So I am going to do 2-3 hours and then it will go into the "Box" for 4-5 days.
