I think I'm overthinking this. I need to be able to cook a whole chicken on one day, store/transport it, then shred/chop it for a soup the next day. Would it be better to cook and transport whole or go ahead and shred/chop it for transport?

I would shred/chop when it's still warm just because it's easier to get everything apart and to get all of the bones out. You can always vac seal it to help it retain moisture.

Definitely easier to shred and chop ahead. You can put it in a freeze ziplock bag then refrigerate. Chicken is very versatile.

Agreed - do it after it's cooled a bit. Move them into either ziplocks or what ever you want to transport.
