Hi all I am thinking of using two traeger for a restaurant project I am working on.
These grills will be used almost 24/7.
Can you maybe tell me about your evtl. experiences or point me in the right direction for more infomation?

If you are planning to use a pellet smoker for commercial use, I would suggest that you take a look at some of the stainless steel smokers. While these will be more expensive to purchase, in the long run, they are likely to be less costly when used in a commercial application. I do not know what brands might be available in Switzerland.
 
Curious what your plans are for pellets? I've never calculated what mine burns per hour, but it varies based on temps (cooking and ambient). Seems like a stick burner could be more economical. Just depends on how much you like the set it and forget it personality of a pellet grill.
