Super smoke

Hi! I’m a new smoker, loving the Ironwood 650 and having fun cooking all kinds of stuff on it! I’ve used the super smoke a couple times but I’m not sure it’s working right?? At 225 I hit the super smoke and grill indicates it’s on. What is strange is that the fan turns on and off - is it supposed to do that?? I haven’t peaked to see if it’s more smokey. Just want to make sure it’s working properly. Fan is one for a few seconds and then off for a few seconds. When SS is off fan is constant. Any confirmation would be appreciated!! Thanks!
 
Yup, that's how super smoke functions. It will vary the fan by cycling to produce extra smoke.
Glad you are enjoying your IW650. Definitely share some of your cooks with the community

When the fan is blowing at full speed, there is sufficient oxygen for the fire to burn cleanly and you will get very little smoke. When the fan slows down, the combustion will be incomplete and there will be more smoke.

That is why when you cook at higher temperatures, the fire is burning hot enough that you get almost no smoke flavor at all. If you are baking a cake, you probably do not want smoke flavor, so for some types of cooks you can take advantage of that phenomenon.
