Some one day finish the next?

I’m cooking ribs. I would like to smoke to 160, wrap with foil, cool, then refrigerate overnight, cook to 205 next day.

anyone have experience with this and advice?
 
Once you wrap in foil there is no more smoke, so you should not have an issue finishing them in an oven....
 
I don’t think there is anything wrong with wrapping in foil, and finishing in the oven.
However, I sure wouldn’t let them completely cool, much less refrigerate them before finishing. Wrapping in foil (which I also do for ribs) steams the meat somewhat, and finishing from cold to 205 would be way to long in foil for me. I also think 205 is a bit to done, but that’s just me.
 
When I did 5-6 racks at a time, my "wrap" step was in a turkey roaster, foiled or not, don't matter, the roaster acts like the wrap.
It actually works great and like John said, your meat does not take on smoke after 165
