Smoking Two, Whole, Boneless Turkey Breasts (advice needed)

Good afternoon everyone.

The in-laws called and said they were coming over. They asked if I could smoke a turkey breast. So, off I go to BJ's and Shoprite. I picked up two, total weight for both is around 12 pounds. They are thawed out, but I didn't have time to brine them. I did a breast once before, but don't remember what I did - duh! So I'm kinda wingin' this cook (no pun intended).

From reading the boards, it appears that total cook time should be around 3 hours at 275-300. I'll pull at 165 and let it rest for an hour or so. My game plan is to serve dinner at 7 pm, so I am planning on placing them on the smoker around 2pm

Any advice would be appreciated
 
I cook mine at at pit temp if 275. Starting at 2 should give your plenty of time. If it finishes early you can always wrap in foil and put in a cooler

Final cook

3 1/2 hours at 300 degrees. Let it rest at 175 for 45 minutes
