Does any slice their pork butts in half horizontally, rub and season both sides, place them back together and tie with butcher twine prior to cooking? Seems like a way to get more of the rub/seasoning flavor into the meat. If so, notice in differences?

I’m not sure why you’d even have to tie them back together. Keep them apart and work on more bark / surface area if you’re going to do that.

And yes, I have heard of people slicing a larger butt so it would cook quicker.

I just cut them in half and smoke smaller butts... 4.5lb each usually...
More bark, never dried out, works perfect... even allows to get done a little earlier
