Question on using the probe on PRO 575

After reading and re-reading the probe cooking instructions, I need to confirm my understanding of how it all works. So, when using the probe, can you set the grill temp to your desired cooking temp as well as setting the probe for the internal temp that you are trying to achieve? In the second step in cooking with the probe in the owners manual it states that "Once the grill is preheated to the desired temperature" makes me believe that you can set your desired grill temp as well as probe temp.
 
You can use the mobile app to set the grill temp. And you can also set an alarm in the app to tell you when the probe gets to a certain temp. It'll notify you if the probe falls out or when your meat is to temp. It won't turn the grill off, estimate the cooking time, or do anything else. You can also set the probe alarm in the grill menu. Being new, the first thing you should do is check your probes for accuracy. Factory probes for most manufacturers are notoriously inaccurate. Mine is spot on at low temps but pretty far off at high temps. Get a glass full of ice and then water and it should read close to 32 degrees. Then boil water and see what your meat probe shows for that. I ended up buying an ink bird brand set that are much more accurate. The ambient probe in my 780 pro is almost 50 degrees off at temps over 400.
 
My 575 factory probe never made it out of the plastic bag... they are known to be :poop:.
You should have a second accurate probe to make sure you are not eating uncooked food.

I have a Thermopen and a Redi Chek remote that I regularly use. I'm only using the factory probe to ball park the temp and then checking with the Thermopen.
