Pre-Smoking Chicken

So guys,

If you want to add some low and slow smoke to your chicken (Or any other meat) then turn up the heat to completely cook, do you leave the meat on the grill till the higher temperature is met or remove it first then put it back in on the higher temperature? 🔥

I leave it on the grill if it's chicken that just needs to finish cooking. If it's something like steak that I need to sear, I pull it so it doesn't overcook.
 
You can put your protein on the smoker during the startup process . Stick Burning Joints like Jirby at Goldies talks about doing it and the benefits of “dirty smoke”....

The entire Video is good.. but bump to the 4min mark if short on time.....
