OCTOBERFEST BRATS AND SAUERKRAUT
HARDWOOD: Hickory, Apple, Cherry, Pecan
COOK TIME: Approximately 3 Hours
EQUIPMENT:
* 1 – Large Pot with Lid
* Frying Pan
* Large Cast Iron fry pan with lid
INGREDIENTS:
* 6 - Brats
* 24 oz Sauerkraut
* ½ - lb of double smoked bacon
* 2 – Tablespoons of Butter
* 1 – Teaspoon of Caraway Seeds
* 1 – Bottle of your favorite Beer
* Gulden’s Mustard
* 1 – Small Red Onion (diced)
* 1 – Small Apple (diced)
* ¼ - Cup + 1 – Teaspoon of Brown Sugar
* A pinch of Ancho Chili Powder
* 6 - Buns or hard rolls
PREPARATION:
* Dice the Onion
* Dice the Apple
* Dice the Bacon
YOUR COOK:
1. Warm Caraway seeds in a dry frying pan until fragrant, then put the seeds into the large pot.
2. Set and Pre-Heat your cooker to 350 degrees.
3. Once the cooker has reached 350 degrees, Brown the bacon in a Frying Pan, then add the onions, a Teaspoon of Brown Sugar, a Teaspoon of Mustard and a pinch of the caraway seeds to the Fry Pan.
4. Once the Bacon/Onions are done, transfer the mixture to the large pot (Leave the bacon grease in the fry pan for cooking the Brats)
5. Squeeze excess liquid from the Sauerkraut, rinse with cold water, squeeze out excess liquid again and add to the large pot.
6. Add ¼ - Cup of brown sugar; 1 – Tablespoon of Mustard; and a pinch of Ancho Chili Powder to the pot.
7. Add ½ - Cup of Beer and the diced apples to the pot.
8. Stir everything together and simmer on low with the lid on for at least 2 hours.
9. Arrange the Brats on the grill grates and let cook for 25 minutes – turning frequently.
10. Transfer the bacon and onion grease to the large fry pan, add the Brats and the rest of the beer. Cover tightly
11. Let the Brats simmer for approximately 45 minutes.
12. Butter the cut side of the buns and toast on the grill.
13. Serve the Octoberfest Brats and Sauerkraut
NOTES:
* An Hour and 10 minutes before the sauerkraut is done, place the brats on the grill for 25 minutes; then transfer the brats to the fry pan with the bacon and onion grease and simmer for another 45 minutes. This way everything finishes at the same time.
