Newbie’s failed attempt

Hi all
New to the forum and new to
Pellet grills. Got a 22 pro for
Christmas and after breaking it
In I tried my first cook.
A 2” bone in ribeye. I preheated
To 225 put the probe in and
Placed the steak on the grill (center). Followed the recipe to
The letter. The temperature fluctuated between 215 to 250 degrees. After 45 minutes probe
Temp was125. I took the steak off
And turned up the heat to 450.
Grill didn’t get past 325 to 350 after 30 minutes. I gave up and
reverse seared it under the broiler.
All in all it was just ok…almost no
Smoke flavor and I was using
Traeger mesquite pellets.
What went wrong?
I have read up on this and am stumped. I understand these grills
Are better for low and slow.
Any suggestions would be appreciated.Thanks
 
That seems pretty normal if you’re in a cold climate. My pro 34 is similar. What was the temperature outside that day? What pellets are you using? Also if you’re in a cold climate get the insulation blanket for it. It will help a lot. My pro 34 has never been able to sear a steak. I use it for smoking bbq, cooking and baking. If I want to do a reverse sear I sear them in a cast iron skillet on the stove

In my 34 mesquite would not get much hotter than 400 when set to 450. If it’s 75 degrees out I’d think it would at least be around 400ish. I’d try hickory and see what the difference is. 325 to 350 when it’s it’s 75 out seems low

1st 2 mistakes were following anyone's recipe "to the letter", and relying on the Traeger Probe

A Pro22 is bad with keeping good temps, and the factory probe is nothing but :poop: (they all are on every Traeger)

You might NEVER get the grill up to 450... I didn't and I also didn't get mine to hold 200 for Jerky either... so I took it back and went to the 575.
