Making Jerky

I have found a technique, very simply 165 super smoke for 3+ hours depending on the slice thickness. Anyone have other tricks or tips they use for jerky, particularly poultry jerky.
 
Personally, I hate dried meat, but I recognize that some love it.

The first time I tried smoking chicken breasts, I ended up with chicken jerky. I cut the chicken to thin. I now use either split chicken breasts or very large boneless, skinless chicken breasts that I bring ahead of time to keep them juicy.

Your technique for jerky will certainly work. Cut the meat thin, and smoke it low and slow so the moisture evaporates. You will need to decide whether you want to apply a marinade or sauce for extra flavor.
