Great questions! Personally, I prefer dry aged for steaks (30 45 days is perfect) because of the richer flavor. For grass fed vs. grain fed, it depends grass fed is leaner, while grain fed has better marbling.

As for Black Angus vs. Hereford, both are great but Black Angus usually has more marbling. Organic isn’t a must for me but I like knowing the source.

What’s your preference?
 
Dry aged beef is best for fattier cuts like ribeye, while wet aged is ideal for leaner cuts like filet mignon. Grass fed beef is leaner, while grain fed is more tender and flavorful. Black Angus is known for marbling and Hereford for leaner meat. Consider your preference for flavor and texture when choosing.
