Kraft Paper vs Butcher Paper for Smoking

Hi everyone,

I’ve been experimenting with different types of paper for wrapping meats on my Traeger and I’m curious about what you all prefer Kraft paper or butcher paper?

Do you all have a go to preference for wrapping or do you skip wrapping altogether? I’d love to hear your thoughts and experiences!
 
I've only ever tried butcher paper. But this line doesn't make me want to try Kraft paper.

Factors to consider when using kraft paper as butcher paper

While the temptation to use kraft paper as a substitute for butcher paper may be strong due to its readily available nature and lower cost, there are essential factors you should consider:

  1. Food Safety: Kraft paper is not typically designed to be food-grade, which means it may not be safe for direct contact with food. The risk of chemical leaching from the paper to the food is a significant concern that cannot be overlooked.
 
I prefer butcher paper for brisket to keep the bark crisp but sometimes I skip wrapping for more smoky flavor!
 
As someone who spent my 41 year career in the paper industry, I would not recommend using Kraft paper for cooking, Much of the Kraft paper these days is produced from recycled fiber, which can contain all kinds of contaminants that you do not want in direct contact with your food. Kraft paper is suitable for indirect food contact, such as a napkin to wipe your hands and and also the bag to hold your burger and fries.

Butcher paper is made from virgin Kraft pulp (not recycled) and is treated with wax to give it some resistance to blood, grease, etc. It will be produced under guidelines making it suitable for direct food contact.
 
I prefer butcher paper for the bark but skipping wrapping also works great how did Kraft paper turn out for your brisket?
 
I use unwaxed butcher paper for wrapping briskets and the odd Christmas present, and HD foil for anything pork.
