Today did Bottom Round beef jerky. Sliced against the grain and marinated for 24hrs

Soy, apple juice, bbq sauce and bbq Seasoning..

Maxed out the Ironwood 885.. it came out delicious.

165 for the cook with pitboss competition pellets

Best way is to freeze the meat for about an hour to 45 mins and then slice it. It hardens the meat and makes it easier to cut thinner slices. Sharp knife helps too!

Just saw you asked how thick, not how.
So how thick??
