A good friend sent us a Harry & David meal kit as a housewarming present. It came with these steaks and rub and I was wondering how I would go about cooking them up? SWMBO likes medium and I like rare.

All suggestions welcome!

Olive/Rub and Supersmoke at 180-200 until they get 5-10 degrees lower than you want to eat them at. Then reverse sear them for a few mins per side.

Thanks! Forgive another dumb question but roughly how much time should I plan for the smoke? The sides will take 45-50 minutes in the oven.

Kinda hard to say as it depends on the thickness. I looked back at a log of mine though and I smoked a bone in rib for about 45 minutes at 200. At that point is was 125 degrees.

Based on the picture, I'd guess maybe 45-60 mins at 180-200? 6-8oz filets?

They sure would look good with a piece of bacon wrapped around them.

I'd agree with others so far...max 60 minutes but IT is always the way to go. If they look like they'll be done earlier than expected, you can always put the grill in "keep warm"mode. And if they are taking longer than expected, sear them on a skillet for a couple of minutes on each side. And I second traeger860's bacon addition!!!

I just happen to have a couple pieces of bacon, I’ll wrap one for now as SWMBO isn’t sure about the idea.

Wrap with bacon then put the rub on?

I tend to put the rub on all over the meat and then wrap the bacon. On the part under the wrap, the fat will render a bit and help soak in the rub. There's really no wrong way - just personal preference.

I usually put the rub on first too - but the peppercorn rub you're working with would probably be just as good on the bacon.
