How to Rest Ribs

I'm smoking a couple racks of St Louis ribs tomorrow, using the 321 method. After they come off the T (unwrapped), i understand I need to let them rest awile. I am thinking 20 minutes or so?

Question is should the racks rest unwrapped, on just a plate or baking sheet? Any need to keep them in a cooler like butts or briskets? Will the meat be not warm enough if the racks rest out in the open?
 
I put my ribs in a large disposable tip pan covered with foil. By the time i get everything else ready to eat, they sit maybe 15 mins and are perfect temp to eat.
 
You also have a keep warm on your ironwood I believe. Since you cook them to around 205 IT. They wouldn’t be hurt by sitting on a grill at 165. I would let them cool down a bit to stop the cooking carry over that can happen with the hot bones.
