High Temperature Cheese?

I'm considering a recipe that I found online that calls for "High Temperature Cheese". Can I find this at a typical grocery? Are certain cheese types (i.e. cheddar) considered "high temperature"?
I don't think I've ever seen "High Temperature" printed on a cheese package. I'd rather just buy something local and not order via the web.

Find it at sausage making sites online.


If you want it local, try your butcher shops, that make sausage. Deer Processing shops too also make sausage with cheese.
 
Regular cheese will just melt out. It could also add to much liquid to your product when it does melt making it fall apart or crumbly.
The high heat cheeses have a higher tolerance to heat and stay in tact qirhout melting. Like @Slimpicker said, usually used in sausage making. So any butcher making their own sausage may have some. But it's easily ordered online too.
