Hey there,
I was in stage 1 smoke of corned beef recipe and was an hour into the smoke at 180f. I noticed excessive smoking. I went out to check it and the temp said it was at 780f! Of course I removed the brisket - and hit the power down. Why did it do this and did my grill just damage itself?
Best,
Lisa

When you removed the brisket, what did you observe?

Was the fire only in the burn pot or was there a grease fire?

How old is your grill?

If it was new, did you go through the burn-in process to season the grill and remove all the factory oils?

If it was older, how long has it been since you cleaned it?

Make sure you thoroughly clean the grill before trying again. At 780F, you probably burned off the paint on the grill. You might need to reapply a high heat paint on the outside of the grill to protect the metal. Do not paint the inside of the grill as you do not want to take a chance of flakes hitting the food.

It does sound as you had a grease fire. Clean the grill as @RayClem recommends.

Also the insulation blanket is not to be use over 32f outside air temperature as stated by Traeger.
