Great weekend to smoke meat

Hey all, 104 (40) degrees here in Perth Western Australia today so looks like a great weekend to do a brisket. Only fairly new to smoking after a holiday to the US in 2019. No better way to spend a day than smoking meat on my new Trager and a few drinks.
Have a great weekend and if you have any tips for beginners, please share.

Keep in mind, this is not like baking something. Recipes for smoking are generally guidelines to getting the end results you want. You will get lots of opinions, probably as many as there are people. Some will insist their way is the only right way.....but do what you want.
Enjoy your cook with friends and it will be a success.

Haha thanks for the reply, I have never experienced anything like 9 F in my life. I will have a beer for you tomorrow.

Thanks for the advice. I have fun listen to people but putting my own twist on it, I have had some different results but never a bad brisket especially as you say when it's with family and friends.
 
Well, it's warming up to -24C here today, so you've got me beat by a little bit. lol

Keep in mind that every brisket is different, so the timing in any recipe is just a guideline. The meat will decide when it is done, but it can rest in a cooler for several hours to keep warm if it gets done earlier than you expected. Better early than late in my opinion. Good luck!

No need for snow boots here although I envy people get to enjoy snow and 4 seasons.
It’s great to visit a place with snow every 5-10 years or so.
Your comments reveal you haven’t spent too much time in places where the temps are well below freezing for months on end. Oh, and the wind, the wind is really great on top of cold temperatures. 😁😁😁😁

This is very good advice. This really helps the final product. 👍🏼

I would only add that if it’s done and probes like butter, I would let it sit out in the open 1/2 at least before the cooler to stop the carry over cooking. If it’s done it’s done. No need to have it carry over. Enjoy.
 
Australia…..man when I joined this forum I never fathomed I’d communicate with people from so far away about BBQ. This place is great.

I think it's great, smoking meat has only taken off over past 5 years or so in Perth. When my wife and I holidayed in the US it took me a while to get her to try brisket but we are both sold now, her idea to get a Traeger. The same as biscuits and gravy.

You wouldn't, 40 is bloody hot! That is the day you start your Traeger up set the temp and stay inside with the a/con on until you have to wrap.😓
