Grease Trap reassembly

So when we last left our damsel in distress (me) I had a massive jam in my auger in my first generation Timberline 1300 AC model. After successfully taking literally the entire grill apart to free the auger (which was honestly one of the worst things I have ever taken apart and I take a lot of stuff apart) I was able to free the jam. Now that it is still partially disassembled I am working on the very neglected grease trap by the previous owner. I personally haven't used it as a grease trap I just put a pan under my food but I cleaned it out the best I could and I have a question. There was a small gold grate in there covered in grease and not attached to anything. Where does that go back? Also do you keep that little black square cap on when cooking or off? Now that it is apart I can finally see down the chute etc.

I notice your in a very high humidity environment. A friend of mine lives in Florida and solved a similar problem by removing his pellets from the hopper after his cook and doing a start up, that emptied the auger of the existing pellets. Just a thought.
