Hey all, been using a weber smoky mountain 18.5" for a few years. Love it, probably won't get rid of it. Anyways... turned 40 this month and my wife surprised me with a Silverton 620 from Costco. Got it together and seasoned... Can't wait to cook on it, just not sure what to cook first. My wife said burgers are not good enough for the first cook.

I would do a pork butt. I took 2 Silvertons back due to temperature fluctuations that were really bad. So a pork butt is something that is easier to do and more forgiving so you can learn how your grill will work with holding temps and hot spots on the grill. It’s more challenging than burgers but gives you a chance to practice before doing a brisket.

Welcome and yes, I agree do a pork butt/shoulder or even a whole chicken at high temperature.
