I have a 10 lb pork butt and a 4.5 lb rack of beef back ribs I was planning on cooking overnight. My initial thought was to set it at 200 around 11pm, then when i wake up see where theyre at and bump it up to 225 or 250 depending on the fat render and bark.
2 issues here: 1. Ive only ever used a kettle or an offset and im used to spritzing after 3.5 hours. That doesnt seem like a common practice on pellet smokers. Ive also never smoked below 225.
2:, ive never smoked beef back ribs, but id assume they cook similiar to pork ribs but take a little longer.
I dont usually cook to temp, its all on the bark and probe tenderness and bend when cooking ribs. Is it safe to cook these both at 200 for about 8 hours without checking them?
How would you handle this? I dont intend for both to be done at the same time, but i do plan on giving the pork butt about a 2-3 hour rest. I also dont have a set time when i need to have them done.
