I’m cooking my first brisket on Christmas with the In-laws. It’s just under fourteen pounds. Does anybody have any tips or suggestions for a newbie that I might not be able to pickup from just a recipie?

Also, the recipe says it will take nine hours. Does that sound right?

I JUST enjoyed my first full packer brisket for dinner. For sure watch this entire video of Matt Pittman on Treager Kitchen Live go through an entire brisket prep, cook, and slice. It took so much of the guesswork out of it. I started mine the night before to allow plenty of time to rest so my cook time was quite long. Allow yourself 10 hours for the cook, then add at least an hour for the meat to rest before slicing.

My family doesn’t love too much seasoning, so my rub was a light salt, pepper, garlic powder, paprika, and a little sugar. I have a smoke tube ard used it for the first couple hours of the cook. I used hickory pellets for both the Treager and the smoke tube.

Good luck and enjoy!

It's going to take much longer than nine (9) hours IMHO if you are smoking it at 225 +/-. I did my first brisket on NYE last year, and it was about 15 lbs and took almost 15 hours, and that was cranking up heat at the end because I didn't want to miss the champagne :)

Every piece of meat is different, but I would plan for longer than the recipe's time, plus you can wrap it in a towel and put it in a cooler for 3-4 hours if it was done earlier than you planned.

Good luck and Merry Christmas!
