Elk Burgers

I've never had elk myself but I have eaten ton's of venison in my life. If I am eating venison burgers, just on a bun, I will add some beef fat to it and grind it in. If I am using it for sloppy joe, spaghetti, etc. I will brown it as is. Obviously if you are getting elk strictly because of the health benefits you won't want to add beef fat, but if you killed and elk and are looking for better flavor and a burger that doesn't fall apart and is dry, some beef fat goes a long way.
