Hey all,

I am new to BBQing and I was wondering, is it safe to use the beef tallow that ends up in the drip bucket on the right side of my traeger? Probably a silly question, but just want to make sure before I serve anything to my family.

To elaborate, the fat in the drip bucket is going to be contaminated with ash and other byproducts of the cook. Also, the fat will be held at a temperature that might allow growth of bacteria.

If you wish to use beef tallow, save all the scraps from trimming your beef and keep it in the refrigerator until you are ready to process it. To render the fat (separate it from protein, water, etc. ), put it in a pot and heat it on low heat to a temperature of about 140F and hold it at that temperature for a couple of hours. Then filter the suet to remove meat scraps and other contaminants. There are a number of YouTube videos that will show you how to do this.

Those who smoke briskets are particularly fond of using beef tallow during the wrap phase.
