I recently brought back some fresh frozen Coho I caught in Alaska and going to try a cold smoke.

I have been reviewing a lot of recipes and see that you need to keep smoker below 85 degrees. I plan to use a smoke tube.

Question: can you turn T1300 fan on without lighting the pellets and just run the fan?

Also curious if anyone has cold smoke in their T1300 and any hints you have.

I did already do a hot smoke at 165 degrees on one of the filets and it came out ok, want to try the cold smoke method next.

I dont think you'd need a fan running..? Maybe park a wood chip under the lid to keep it open a crack. How long does it take to cold smoke a slab of coho?

Most other videos I have watched suggest running the fan for a cold smoke.
