I've finished my brisket but won't eat for a couple more hours. Can you let it "rest" in the cooker till time for serving?

And I guess that's why I have a Yeti cooler!Keep it wrapped and inside a cooler. Add a towel over it before closing the lid. It’ll hold fine.
Unfortunately, even at the lowest setting on the Traeger the meat "may" continue to cook and the brisket can be overdone. The safest resting temperatures are 140-150 degrees and Yeti's are a good choice to maintain it there. If you have an oven at home that can maintain the temperature in this range, that will work as well.I've finished my brisket but won't eat for a couple more hours.
