I am wanting to do a smaller brisket, 9lb, for dinner tomorrow. I have it trimmed and ready to go, however I was thinking about starting this evening on low rather than the 250-275 range in the morning. If I put it on at 9 tonight at about 190, will it get done too soon? I was hoping to pull it off after lunch and to let it rest for a couple of hours.
 
If it does, wrap it and put it in a cooler. It will still be really hot for 3 to 4 hrs or longer.
 
I did an overnight 5.5lber and everything went fine.
It was for hunting dinner that included a 2 hour drive time...


You will do just fine, and no, it should not get done too fast, but Timmy gave the best solution.

I do over night Brisket cooks all the time now, 180-190 over night then it is almost ready to wrap first thing in the morning smoetimes i will bump to 225 to get to wrap temp. Adjust temp after wrap to 250 and monitor some times you need more or less and try to time for about 12-2pm removeal and let it rest it will stay warm for quite few hours.

That’s too high of a temp. Cook at 225. The length of time will be dictated by the internal temp. The temp will gradually rise then it will level off for a few hours. Then it will begin to rise again. When the internal temp reaches 204, it’s done. Remove it then. 204 is the key temp…don’t let it go much higher than that.
